Amritsari Nutri

Amritsari Nutri kulcha is very famous all over the world. This dish is prepared with Soya chunks boiled and prepared with onion, ginger garlic paste and tomatoes.in a gravy like consistency, served with puffed bread called Kulcha .This dish is street food of Amritsar . As everyone is aware of the nutritional value of Soya chunks. So why not try this healthy and Nutrition recipe and Enjoy taste bhi & health bhi. 

What we need:- 

- 1 cup Soyabean Chunks ( small) 

- 2 large onion, finely chopped

- 2 tomatoes ground to paste

- 1 tablespoon ginger-garlic paste

- 2 green chilies, slit

- 1 teaspoon cumin seeds

- 1 teaspoon chana masala/ Meat    Masala 

- 1/2 teaspoon turmeric powder

- 1 teaspoon red chili powder

- 1 teaspoon garam masala

- 1/2 teaspoon cumin powder

- 1/2 teaspoon coriander powder

- 1 tablespoon Kasuri Methi. 

 - 1 tablespoon Amla powder

- 3 tablespoons oil

- 3 tablespoons of fresh Curd. 

- Fresh cilantro for garnish

- Salt to taste

- Water as needed

- Lemon wedges (optional)



Here We Go :-

1 . Boil Soyabean Chunks in 4 cups of water with 1 tbsp Salt & 1 tbsp Amla powder. You can use tea water instead. Cook the chunks till Soft. It will take around 10 minutes. Drain the water from the chunks. Wash again with fresh water. Squeeze the water from the chunks. This process will eliminate the foul smell of Soya chunks. Keep aside. 


2. Prepare the Curry:-

   - Heat oil in a large pan. Add cumin seeds , tejpatta, 4 Cloves, 1” Piece of Cinnamon, 2 green cardamom., letting them crackle.

   - Add chopped onions and sauté until golden brown. Then Add 2 spoons of water and mash the onions with Spatula. 

   - Stir in ginger-garlic paste and green chilies . Saute till the raw smell of garlic is gone. 



3.     - Add turmeric, red chili powder, cumin powder, coriander powder, and salt. Mix well and cook for 2-3 minutes to combine the flavors. Add kasuri Methi and mix. 

   - Add tomato paste and cook until they become soft and the oil starts to separate.


4.   - Add the boiled Soya Chunks to the pan and mix them with the masala.

   - Pour in enough water to cover the Soya Chunks. 


   - Let the curry simmer for 10-15 minutes, allowing the flavors to blend.  Stir occasionally. If more water is required then add but leave some Gravy. It should not be dry as the soya chunks will absorb water after cooking. When the oil will separate from the gravy it is Time to turn off the gas. 


.  - Sprinkle garam masala and stir. Squeeze some lemon for a tangy taste. 

   - Garnish with fresh cilantro. Now your Amritsari Nutri is ready to be served. 

6. - Serve the Amritsari Nutri hot with rice, chapati, or naan. In Amritsar it is served Kulcha and hence the recipe name is Nutri Kulcha.
