Besan Cheela

Besan cheela  is a savory Indian pancake made from gram flour (besan) and is a popular breakfast or snack option. It's nutritious, easy to make, and customizable with various vegetables and spices. Here's a simple recipe to make it:

Ingredients:

1 cup besan (gram flour)

1/4 cup finely chopped onion

1/4 cup finely chopped tomato

1-2 finely chopped green chilies (optional)

2 tbsp finely chopped coriander leaves

1/4 tsp turmeric powder

1/4 tsp red chili powder (optional)

Salt to taste

1/2 cup water (adjust to get batter consistency)

Oil or ghee for cooking

Optional add-ins:

Grated carrot, capsicum, or spinach for extra nutrition

A pinch of asafoetida (hing) for added flavor

Instructions:

1. Prepare the batter:

In a mixing bowl, add besan, turmeric, red chili powder, and salt.

Slowly add water and whisk to make a smooth, lump-free batter. The consistency should be like pancake batter – not too thick, not too runny.

Add chopped onions, tomatoes, green chilies, and coriander leaves. You can also add grated carrots or other vegetables if you like.

2. Heat the pan:

Heat a non-stick or cast iron pan on medium heat and grease it lightly with oil or ghee.

3. Cook the cheela:

Pour a ladleful of batter onto the pan and spread it evenly in a circular motion, similar to making a pancake or dosa.

Drizzle a little oil or ghee around the edges and cook for 2-3 minutes until the bottom is golden and crisp.

Flip the cheela and cook the other side for another 1-2 minutes.

4. Serve:

Once cooked, remove the cheela from the pan and serve hot with green chutney, ketchup, or curd.
