Mushroom wrapped in creamy sauce and sauted with capsicum ,garlic and ginger make excellent filling for the these cheesy sandwiches. They make excellent breakfast option and you can carry it in tiffin too.
We Need
200 gm Mushroom
1 Green Capsicum
8 Slices of Bread of your choice
4 cheese slices
Lettuce 4 leaves
10 to 12 cloves of Garlic
2" Piece Ginger
2 green Chillies
½ Tsp Black pepper powder
1 Tbsp All purpose Flour
½ Cup Milk
2 Tbsp Tomato ketchup
1 Tsp Soya sauce
1 Tsp Schezwan Sauce
1 Tbsp Oregano) / pizza seasoning
Salt to taste
1Tbsp oil
1 Tbsp Butter.
Here We Go:
Wash Mushrooms thoroughly and remove all dust and grime. Drain them . Keep aside
Meanwhile chop ginger ,garlic and green chillies finely. Slice mushroom to fine pieces.
Heat oil and butter in a pan. When butter melts add ginger, garlic and green chillies. Saute till translucent.
When translucent add sliced mushrooms. Saute till the water has almost evaporated and mushrooms are slightly crunchy. Keep the flame on high as mushrooms release a lot of water and the flame should be high to evaporate. It will take around 3 to 4 minutes.
Add chopped green capsicum. After a minute add 1 Tbsp of Maida ( All purpose Flour) and saute for a minute. Add half a cup of milk to this and keep on stirring otherwise the flour will form a lump.
When everything comes together add tomato ketchup, schezwan and soya sauce. Also add pizza seasoning or organo. Saute and check the salt . If needed then add the salt. The sandwich filling is now ready.
Take a slice of bread. Put lettuce leaf on it. Divide the filling in four equal parts. Put filling on lettuce leaf and cover it with cheese slices. Put the other slice of bread over the cheese slice to form a sandwich.
Heat a grill. Baste it with butter. Now put the sandwich in it and grill till done. Alternatively you can grill it on hot Girdle (Tawa)or pan.
Enjoy these sandwiches as morning breakfast or evening snacks with or without tomato ketchup. A hot coffee or tea is a perfect combination.
